Where are my cabbage lovers at?! I happen to be one and I’m proud of it.

Now, where are all my easy meal lovers at? I happen to be one of those, too, and this recipe does not disappoint! It is a darn breeze, and should really not taste as good as it does for how EASY it is to make.

Stuffed cabbage is great – I ate it as a kid. My step mom made it, and I always loved it. However… [BIG however], I cannot even begin to kid myself… I am just NOT going to take the time to peel cabbage into leaves, blanch it, cool it, cut the other ingredients, mix the other ingredients, stuff the other ingredients into the leaf, I mean PHEWWW! Talking about it is exhausting and I am not interested in exhausting food most days.

This deconstructed version of this classic is so darn good, you’ll wonder why you ever spent the time to stuff and roll it.

Deconstructed Stuffed Cabbage

1 T olive oil
1.25 lb lean ground beef or turkey (I used 93% Jennie-O ground turkey)
1 medium onion, chopped roughly
3 garlic cloves, minced
1 small can diced tomatoes
2 cups low sodium broth (vegetable, chicken or beef all works fine!)
2 cups water
1 medium-large cabbage, cut very roughly
1 t fennel
1 t oregano
1/2 t onion powder
1/2 t paprika
1 t salt
1/2 t black pepper
1/4-1/2t crushed red pepper, optional

Brown ground turkey in olive oil. Add onion, garlic and seasoning, stir. Cook oil onions are translucent, about 5 minutes. Add cabbage, diced tomatoes, broth and water, stir and bring to a boil. Turn down to simmer, cover and cook for 45-60 minutes.


Serve with a big spoon, because you’re gonna want big bites!
