Lemon-Dill Tuna Salad – Healthy: Yum-E!
Well, it is about time to reinvigorate that can or pouch into something more!
Think FRESH — fresh Dill, fresh lemon, fresh red onion… FRESH, Healthy & YUM-E!
1 T fresh dill
2 T red onion, diced
2 t fresh lemon juice
1/2 t lemon zest, about 1/2 lemon
1/4 t salt
pinch crushed red pepper (optional)
2 T. plain greek yogurt 0% or 2% (can sub light mayo – changes nutritional value a bit)
1 t. dijon mustard
Mix all ingredients together well. Refrigerate for at least 30 minutes. Serve.
