Lemon-Dill Tuna Salad – Healthy: Yum-E!

Got a boring ole pouch or can of tuna fish? Don’t think you’re a fan of it, or do you remember it being boring and something you were embarrassed to bring in your lunch box at school (Thanks, Mom!).

Well, it is about time to reinvigorate that can or pouch into something more!

Think FRESH — fresh Dill, fresh lemon, fresh red onion… FRESH, Healthy & YUM-E!

Lemon-Dill Tuna Salad
2 pouches tuna
1 T fresh dill
2 T red onion, diced
2 t fresh lemon juice
1/2 t lemon zest, about 1/2 lemon
1/4 t salt
1/8 – 1/4 t black pepper
pinch crushed red pepper (optional)
2 T. plain greek yogurt 0% or 2% (can sub light mayo – changes nutritional value a bit)
1 t. dijon mustard
Lemon-Dill Tuna Salad for the win!

Mix all ingredients together well. Refrigerate for at least 30 minutes. Serve.

Easy. Breezy. Healthy. Yum-E.

so fresh, and so yum-yum!
Eat with a wrap, out of a tomato, scooped on a cracker, in a lettuce wrap, or simply with your favorite fork – you won’t care how you eat it, you’ll just want to eat it. And, you can eat it and eat it, and feel damn good about it!
